Where are my PB&J lovers at? When I think of PB&J I think of my childhood. My childhood wouldn't have been the same if I didn't enjoy my mom's PB&J sandwiches. Luckily for me my kid is just as obsessed with PB&J as I am.😍 We make PB&J sandwiches on a daily basis so peanut butter and jelly are always on my grocery list. Target is offering 5% off on both Jif Peanut Butter and Smucker's Fruit Spreads using the Cartwheel app, so we rushed to my favorite one stop shop to pick up our faves.

This new year I am allowing myself to be a little more creative in the kitchen.When I was challenged to create a recipe using peanut butter and jelly I was inspired by a recipe on pinterest and recreated my own version of PB&J Pudding! Yes, PB&J Pudding! This is perfect to have for breakfast especially when you are on the go. Open up your fridge and grab your pudding TO GO. Especially now that the kiddos are back to school from winter break, and the last thing you want to do is make breakfast. This quick and easy PB&J breakfast pudding can be made in less than 30 minutes, left in the fridge overnight, and enjoy in the morning. It's creamy, peanut buttery, sweet with a touch of healthy, fun to make, and crazy delicious!

INGREDIENTS:
⠂1 cup of Smucker's Strawberry Preserves
⠂1 1/2 cup of unsweetened almond milk
⠂1 tsp vanilla
⠂2 Tbsp of maple syrup
⠂3 Tbsp of Jif Creamy Peanut Butter
⠂1/2 cup of chia seeds
⠂Fresh strawberries for topping (optional)

INSTRUCTIONS:
1. Add Smucker's Strawberry Preserves to small skillet or saucepan. Warm over medium-high heat until bubbling. Then lower heat to medium and stir occasionally for 2 minutes. Remove from heat and add 1 tbsp of chia seeds. Stir to combine.
2. Divide your jelly mixture into small serving dishes and set into refrigerator to chill.
3. Add almond milk, vanilla, maple syrup, and Jif Peanut Butter in blender. Blend on high and taste. You can add more peanut butter for saltiness or maple syrup for sweetness.
4. Add chia seeds to blender and pulse a few times just to mix together.
5. Set mixture in refrigerator to cool for 10 minutes. (I leave my mixture in the blender)
6. Remove your jelly and pudding mixture from fridge.
7. Give the pudding a good stir to redistribute the chia seeds and divide pudding mixture to small containers right on top of the jelly.
8. Cover well and set in fridge overnight, or until it has a pudding consistency.
9. To serve, chop up a few strawberries throw them on top, and add a little more Jif Peanut Butter. Yum! Enjoy!😋

Just a note:
*If chia seeds aren't your thing substitute with oats. It's just as delicious but more like a smoothie!*
