CHICKEN QUESADILLA WITH SALSA VERDE AVOCADO DIP

El Día del Niño (Day of The Child) is soon approaching. Each year on April 30th Latinos have a celebration for the children who fill our lives with love and joy. This day is so special for our children even for us as parents. We all get to channel our inner young soul. I have so many special memories as a child that I want to celebrate and integrate this tradition with Evan. I can continue making magical memories with him. El Día del Niño is a huge celebration, like many others, it involves lots of food, desserts and fun activities for the children.

This year I want to do something fun and involve Evan in the kitchen to celebrate. This Día del Niño we plan to cook something easy and traditional. I find myself using HERDEZ products weekly. QUESADILLA INGREDIENTS:
-2 Flour Tortillas
-1/4 cup Mozerella Cheese
-1 Chicken Breast (cooked)

AVOCADO DIP INGREDIENTS:
-1 HERDEZ Salsa Verde 16oz
-1 Avocado
-1/4 cup Plain Yogurt or Greek Yogurt

Quesadilla Directions:
1. Heat up a skillet over medium high heat. 2. Place tortilla on skillet allow it to cook for about 30 seconds and then flip it over. 3. Add cheese and cooked/shredded chicken. When cheese is slightly melted fold the tortilla in half. Let it continue cooking until chicken is warmed through and cheese is melted. 5. Cut into triangles and serve with Salsa Verde Avocado Dip.
 
Salsa Verde Avocado Dip Directions:
1. Add peeled avocado, 1/2 cup HERDEZ Salsa Verde and 1/4 cup Yogurt to food processor. 2. Once it's nice and blended through, just serve. That's it! Dip your Quesadilla into your Salsa Verde Avocado and enjoy.
